Oxygen (O2) is mainly used for modified atmosphere packing and usually in combination with carbon dioxide and/or nitrogen.
Oxygen is used when packing fruit and vegetables since the oxygen allows the product to breathe and keep its freshness.
When packing red meat, oxygen is used in order to maintain the colour of the meat. If the meat turns brown or grey, the concentration of oxygen is too low.
